Almond butter cake

Recipe from This blog


- 195g all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 170g butter, softened
- 160g sugar
- 1 large egg, plus one large egg yolk
- 1 1/2 tsp vanilla extract
- 12 tbsp whole milk

Bowl A
Mix the flour, baking powder, salt in the bowl.

Bowl B -mixer bowl
Beat butter and sugar 
Add eggs and vanilla extract
Add milk
Bake 180* for 40 mins

I'm super upset. This is my this year birthday present from my hubby but you see, the diamonds dropped and I couldn't wear it anymore! He paid sgd370 to this low quality stuff!! Should ban chanel from now!

Korean Grapes



I bought this special grapes from NTUC. I couldn't remember the price, should be less than $5.00. The taste is so special. Worth to try! But, i still love the US grapes from NTUC :)

高筋麵粉270g,低筋麵粉30g,速發酵母(instant yeast)1/2茶匙,
細砂糖30g,鹽1/8茶匙,雞蛋1顆,無鹽奶油30g,牛奶150cc.

Egg Mayo: 
4 cooked eggs (chopped)
Mix with mayonnaise

Recipe from Angel

(A)
3 egg yolks 蛋黄
1 whole egg 全蛋
50g corn oil 粟米油
(B)
50g low protein flour (cake flour) 低粉(蛋糕粉)
(C)
3 egg whites 蛋白
(D)
50g castor sugar 细砂糖
1g salt 盐

Method 做法:
1) Beat (A) till well mixed with an egg beater. 用打蛋器打匀(A)。
2) Sift in (B), mix well. 筛入(B)拌匀。
3) Whisk (C) till frothy, add (D) and beat till stiff peak. 把(C)打至粗泡,加入(D)打至干性发泡
4) Fold in the egg white mixture to egg yolk mixture in 3 additions, mix till well combined. Scope the batter into paper cups till 60% full. 蛋白霜分3次和蛋黄糊拌匀,用小勺装进纸杯至6分满。
5) Bake in preheated oven at 150C for about 18-20mins. 烤箱预热150度,烤18-20分钟左右。

Mexico buns (mini)

(makes around 15 buns)

Ingredients for Sweet Dough:
(A) Combine together in a mixer:
350g bread flour
70g castor sugar
Pinch of salt
3/4 tsp of instant yeast

(B) Mix together:
1 egg
150 ml milk
10ml evaporated milk

(C)
60g butter

Ingredients for Mexico Topping:
60g butter
50g sugar
Pinch of salt
1 egg
85g plain flour
1/2 tsp vanilla essence

1) To make the sweet buns: Pour (B) gradually into (A) and knead for 10 minutes using a mixer.  Add in butter and continue to knead for around 5 minutes or till dough is smooth.  Cover and let the dough rest in the mixer for 45 minutes, or till doubled in size.

2) Gently knead the dough to punch out air.  Divide dough into 50g portions, shape them into balls and place them into small foil dishes.   Cover and let the dough balls rest for another 45 minutes, or till doubled in size.

3) Prepare the mexico topping:  Cream butter, sugar and salt till well blended.  Add in egg and cream till smooth.  Add the plain flour and mix till well combined.  Transfer mixture into piping bag.

4) Pipe the Mexico topping on the dough in a swirl mode.

5) Bake in preheated oven of 180C for around 15 minutes.

一口乳酪麵包

材料:
高筋麵粉200g,
速發酵母(instant yeast)1/3茶匙,細砂糖30g,
雞蛋1顆,鹽1/8茶匙,帕梅善起士粉(Parmesan Cheese)1大匙,
牛奶80g,無鹽奶油30g



步驟:
1.無鹽奶油回復室溫切小丁備用
2.將所有材料(奶油除外)放入盆中,再倒入液狀材料
   (液體的部份先保留20-30cc,在攪拌過程中慢慢添加)
3.所有材料直接搓揉均勻成為無粉粒狀態又不黏手的麵團
4.然後將奶油丁加入慢慢混合均勻
5.抓住麵團一角,將麵團朝桌子上用力甩打出去,然後對折再轉90度.
   一直重覆此動作到麵團可以撐出薄膜即可
   (此動作純手工約做200-250次)

6.將麵團光滑面翻折出滾圓,收口捏緊朝下放入抹少許油的盆中
7.在麵團表面噴一些水避免乾燥
8.將麵團放入密閉的微波爐中關上門做第一次發酵60分鐘
   至2倍大
   (天冷微波爐中放一杯熱水幫助提高溫度.水若冷了就再換一杯)

9.桌上灑些高筋麵粉,將麵團移出到桌面,表面也灑些高筋麵粉
10.麵團中的空氣用手壓下去擠出來
11.將麵糰滾圓,收口處捏緊,蓋上擰乾的濕布休息15分鐘
12.休息好的麵糰用擀麵棍擀壓成為一塊厚度約1cm的方形麵皮
13.菜刀刀鋒沾些高筋麵粉避免沾粘,將麵皮切成約2cmx2cm的小方塊
14.完成的麵團間隔整齊放入烤盤中,表面噴些水放烤箱中再發酵30分鐘
     (天冷烤箱中放一杯熱水幫助提高溫度.水若冷了就再換一杯)
15.發酵好前8-10分鐘,將烤盤從烤箱中取出,烤箱打開預熱至180度c
16.時間到放入已經預熱到180度c的烤箱中烘烤12-14分鐘到表面呈現
     金黃色即可出爐
17.麵包放在鐵網架上放涼


補充:
1.不喜歡帕梅善起士粉(Parmesan Cheese)可以直接省略
2.麵糰切的大小會影響烘烤時間,請自行斟酌調整
