Lemon cheese cake ^^ non bake!



































这蛋糕真的太简单,太容易做了:)

  • 125g butter, thawed
  • 250g Digestive biscuit (crushed)
  • 500g cream cheese
  • 400g sweetened condensed milk
  • 100ml lemon juice (from 1 lemon)
  • 2 tbsp gelatin
  • 1 ½ tbsp water
  • Rind from 1 lemon, chopped finely
Method:
Combine butter and biscuit crumbs in a big bowl till well-mixed. Press onto based of cake pan evenly using bare hands or a glass. Chill in fridge for 30 minutes till firm.
Cream the cheese in a mixing bowl till no longer lumpy. Add condensed milk, juice and rind, cream till all well mixed.
Combine gelatin with water in a heat proof bowl and place over hot water. Stir gelatin mixture till it turns clear or all gelatin crystals dissolve.
Pour gelatin mixture into cheese mixture and mix well.
Pour the cheese mixture onto the prepared base, spread top till even and chill in fridge till firm (minimum for 4 hours, best to chill overnight).
