一口乳酪麵包

Again, recipe from her! Carol's


材料:
高筋麵粉200g,
速發酵母(instant yeast)1/3茶匙,細砂糖30g,
雞蛋1顆,鹽1/8茶匙,帕梅善起士粉(Parmesan Cheese)1大匙,
牛奶80g,無鹽奶油30g



步驟:
1.無鹽奶油回復室溫切小丁備用
2.將所有材料(奶油除外)放入盆中,再倒入液狀材料
   (液體的部份先保留20-30cc,在攪拌過程中慢慢添加)
3.所有材料直接搓揉均勻成為無粉粒狀態又不黏手的麵團
4.然後將奶油丁加入慢慢混合均勻
5.抓住麵團一角,將麵團朝桌子上用力甩打出去,然後對折再轉90度.
   一直重覆此動作到麵團可以撐出薄膜即可
   (此動作純手工約做200-250次)

6.將麵團光滑面翻折出滾圓,收口捏緊朝下放入抹少許油的盆中
7.在麵團表面噴一些水避免乾燥
8.將麵團放入密閉的微波爐中關上門做第一次發酵60分鐘
   至2倍大
   (天冷微波爐中放一杯熱水幫助提高溫度.水若冷了就再換一杯)

9.桌上灑些高筋麵粉,將麵團移出到桌面,表面也灑些高筋麵粉
10.麵團中的空氣用手壓下去擠出來
11.將麵糰滾圓,收口處捏緊,蓋上擰乾的濕布休息15分鐘
12.休息好的麵糰用擀麵棍擀壓成為一塊厚度約1cm的方形麵皮
13.菜刀刀鋒沾些高筋麵粉避免沾粘,將麵皮切成約2cmx2cm的小方塊
14.完成的麵團間隔整齊放入烤盤中,表面噴些水放烤箱中再發酵30分鐘
     (天冷烤箱中放一杯熱水幫助提高溫度.水若冷了就再換一杯)
15.發酵好前8-10分鐘,將烤盤從烤箱中取出,烤箱打開預熱至180度c
16.時間到放入已經預熱到180度c的烤箱中烘烤12-14分鐘到表面呈現
     金黃色即可出爐
17.麵包放在鐵網架上放涼


補充:
1.不喜歡帕梅善起士粉(Parmesan Cheese)可以直接省略
2.麵糰切的大小會影響烘烤時間,請自行斟酌調整

chicken floss buns!

i used the same method to make the buns. I made few sausages buns besides the chicken floss buns :)



I was so blur, i put the floss on top of the sausage buns LOL

Nestum Prawns

First trial of nestum prawns tonight!

not bad! but i couldnt find the white prawns in NTUC. Thus, i have to use tiger prawn and its a bit hard to bite :(


Steamed fish. Add garlics, ginger, tomatoes on top of the first and steam it for 15 mins. Before that, i added the soya sauce in the bowl.


Healthy veggie again. stir fry long beans with garlic!

Mini sausage buns 雞蛋奶油捲

This is the second trial of Carol's recipe. I love the recipe book very much *^

雞蛋奶油捲
約做8個

材料:
高筋麵粉270g,低筋麵粉30g,速發乾酵母菌(instant yeast)3/4茶匙,
雞蛋3顆(約150g),鮮奶50cc,細砂糖30g,無鹽奶油30g,鹽1/4小匙

註:如果使用乾酵母(active dry yeast)使用量請增加1倍,事先放入
      配方中溫牛奶(手摸不燙程度)中靜置5分鐘

Stir Fry LALA


Dinner time again. today is LALA day :)
Mum used to cook LALA when we were kids. And, we love it!!
So, since I found the LALA in supermart today, let's try and see^^


ingredients:
LALA (white clams) 400g - prewash with salt, soak into the water)
onion (i forgot to put ^^)
garlic
ginger
spring onion
salt
oil

heat the oil and add garlic, follow by ginger and LALA. Add the spring onion and salt to taste. done when all thew LALAs are open completely.


Fav Broccoli

ingredients:
broccoli
salt and garlic
pepper
meat (sliced)
mini tomatoes

add few drops of oil and garlics. add the meats. add the veggie and stir well. add the tomatoes and DONE! This taste like salad as i don't stir till its fully cooked!!

Custard buns

I die die must try the recipe from the book that i bought yesterday!

I took 4 hours to prepare these buns! Interesting yet tiring day!!

Finally, after waiting time of 60 mins
Cutie buns. After this, put in the oven for 60mins again.....

Lunch today



No heavy food today! I must continue my diet plan!

Brown rice 1 small cup
Water
Soya sauce
Pepper powder
Minced meat

Brown rice with water for overnight
Cook the the brown porridge
Mix soya sauce, salt and pepper to meat for at least 30 mins!
Pour into the porridge!

Tada!




Book of baking for beginner like ME!

Her blog is my fav and im her regular follower. And finally, i have this book and dont need to put my ipad at my kitchen when baking hee hee. I love books better!!


Bread pudding

I had few sinful meals today. Firstly, i went for dim sum for my brunch. I took duck breast rice for late lunch. And now, bread pudding pulak!!

Haih, how to keep fit then?!
I have 2 butter buns on my dining table and i want to clear them. So i cut them into small pieces and add the milk with vanila essence and egg.

I added sugar on top of the slices and ground almond too! And and!! I pour a bit evaporated creamer!!! I must be crazy tonight!!!

Ingredients :
2 slices of white bread spread with butter but i used the butter buns that i baked on friday night!
25gm sugar
1 egg
150ml milk. I used Anlene milk.
1/2 tsp vanilla extract
Raisins or Cranberries or evaporated milk or almond. I dont have raisin or cranberries this time round!
Method :
1. Cut up the buttered bread is cubes and arrange in a small bowl.
2. Beat egg awhile and mix with milk and vanilla in another bowl.
3. Stir in raisins or cranberries
4. Pour the liquid mixure into the bread and let it sit for 15 mins. I added sugar and ground almond on top of the bread
5. Bake at 180 degrees for 20 mins.

Saturday night with hubs at home

幸福很简单。他在工作,我在看戏!只要静静在他旁边就够了。幸福是有估打的,一天一点点就好!



烩饭变成炒何芬"/

My backache is getting serious till i coundnt sleep well. This makes me lazy to go out even today's is our paktoh day, saturday!!

Hubs has to help himself today. He just had the buns that i baked last night for his breakfast. I cooked the brown rice using the new panasonic rice cooker. But hubs cant wait to dinner. So i just took out the hor fun from fridge and fried for him! No rice tonight!!
Dinner
Hor fun half packet
Dark soya sauce
Prawns (mixed with corn starch)
Fish cake and carrot
Meat (mixed with corn starch)
Chopped garlic
Oil
Xiao bai chye

Heat up the oil and put the garlic and add the meat then prawns.
Add fish cake and carrot
Add the vege
Add water, salt and pepper powder
Add corn starch that mixed with water. Stir and add the egg.

P/s i fried the black chicken drumstick for hubs too. He loves it so much haa!
1 drumstick with thigh
Chop and cut into small pieces
Mix with salt, pepper, 五香粉
Add corn starch
Keep in the fridge for 30 mins

Fry with high heat till the meat is cooked!

My home in singapore

I left my hometown more than 10 years already. First, i went to a local university in johor after spm. After 4 years, i decided to work in Sg after graduation.

Hubs n i bought this house few years back. We didnt spend alot on renovation as we were poor enough after paying the downpayment!

Now, i look back, im so fortunate to have this house called home! But i still looking forward to going back my hometown when im getting old. This is my little wish but my hubs prefers here more than my hometown. Im trying hard to convince him hehee
